Homemade Sausage For Traditional Irish Breakfast

There’s nothing quite like waking up to the aroma of a homemade breakfast and the Irish know how to do it! 


A traditional Irish breakfast that is substantial, filling, and always includes Irish bangers (sausages). 

In this blog post, I’ll take you step by step on making your very own sausages that will amaze anyone who loves Irish-style bangers.

What Is In A Full Irish Breakfast?

The Full Irish Breakfast is often called the “Fry Up”.


It is known for its combination of flavors, textures, and traditions that make it an unforgettable dining experience. 

A hearty meal that is perfect for a weekend breakfast, lunch, or dinner.

A Traditional Full Irish Breakfast Usually Includes –

  • Fried eggs
  • Bacon Slices – Irish bacon usually has to be ordered on line (see FAQ’s). So choose your favorite thick sliced bacon and fry it up!
  • Sausage – Links or patties
  • Mushrooms – Sauteed (sliced or caps)
  • Tomatoes – Roasted or grilled
  • Potatoes Hash browns or fried potatoes
  • Baked beans – Beans add sweet and tangy flavor to all the savory items on the plate. Use your favorite!
  • Soda bread / Irish potato bread – Toast of some type served with Irish butter.
  • Black pudding or white pudding (see FAQ’s)
  • Orange juice
  • Hot tea and coffee

They are actually simple, easy to prepare, have the perfect texture, and are very tasty!

This version of Irish sausage, is made without a casing. In fact, you don’t even need a meat grinder.  

The fresh sausages are a quick mix of ground pork, bread crumbs, flavorful spices, and then browned in a frying pan!

Irish Sausage Ingredients

There is a large white bowl with raw ground meat in it. There is a medium white bowl with finely crushed bread crumbs in it. There is a small white bowl with yellow oil in it. There is a brown egg and a white plate with five little mounds of ground seasonings and 2 cloves of garlic on it. Items are on a white and black terrazzo surface.

What You Will Need

  • Egg
  • Garlic
  • Salt
  • Black pepper
  • Ground cloves
  • Dried thyme
  • Dried majoram
  • Vegetable oil

  • Large mixing bowl

  • Large frying pan / cast iron skillet

Step By Step Homemade Sausage

  • In a large bowl, mix all the sausage ingredients together except the oil. 
  • Blend throughly.
  • Divide the pork mixture into 12 equal portions. 
  • Form the mixture into patties or links.
  • Heat skillet over medium-high heat. 
  • Add the vegetable oil and heat.
  • Place the sausage links or patties in the hot pan.
  • Brown the sausages on all sides until they are fully cooked.
  • Remove your homemade Irish sausages from the skillet and drain them on paper towels to eliminate excess oil.

These delicious homemade Irish-style sausages are made from scratch and perfect to cook on the stove top, in the oven, or on a grill. 

The fresh sausages are a quick mix of ground pork, bread crumbs, flavorful spices and made without a casing.

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes

Ingredients

  • 1 pound ground pork
  • 1 cup panko bread crumbs
  • 1 egg (large or extra large)
  • 2 teaspoons minced garlic
  • 1 teaspoon coarse salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried majoram
  • 2 tablespoons vegetable oil (for cooking)

Instructions

  1. In a medium bowl, mix the bread crumbs, salt, pepper, and spices together.
  2. In a large bowl, mix together the ground pork, garlic, and egg.  Blend throughly.
  3. Add the bread filling mixture to the meat mixture. Blend until all ingredients are combined.
  4. Divide the pork mixture into 12 equal portions (approximately 2 to 3 ounce portions).
  5. Form the mixture into patties or links.
  6. Heat skillet over medium-high heat. 
  7. Add the vegetable oil and heat.
  8. Place the sausage links or patties in the hot pan.
  9. Brown the sausages on all sides until they are fully cooked. (internal temperature should be 160 F for safety)
  10. Remove your homemade Irish sausages from the skillet and drain them on paper towels to eliminate excess oil.
