Ingredient Notes

- Shrimp: Choose large or jumbo, raw shrimp that are peeled and deveined for a quick prep. Any size smaller and the shrimp may get over cooked and become tough during the baking process. I prefer to use fresh shrimp but frozen shrimp can be used.
- Dry White Wine or Broth: A splash of wine adds depth to the shrimp. You can substitute vegetable broth if you prefer.
- Fresh Lemon Juice: Brightens up the flavors and gives the dish a fresh, zesty finish.
- Garlic: Fresh garlic brings a burst of aromatic flavors in any dish, don’t skip it!
- Butter: I like to use unsalted butter to control the sodium when cooking.
- Panko Breadcrumbs: Japanese-style panko gives the shrimp a wonderful light crunch. Panko crumbs are lower in calories, sodium, and fat. They are also higher in fiber making panko bread crumbs a healthier alternative. Regular breadcrumbs can be used, just keep in mind that the dish will be a little heavier and crunchier.
- Parmesan Cheese: Adds a rich, savory flavor that pairs perfectly with the shrimp and bacon. Use freshly grated Parmesan for the best taste and texture.
- Fresh Parsley: Adds a bright fresh flavor to the topping.
Step-by-Step Instructions

- In a small bowl, mix wine, lemon juice, butter, and garlic.

- Add crumbled bacon and broil for 2 minutes to a golden brown color.
See the recipe card below for complete measurements and bake time.

Laura Belle’s Tips
- Pat the shrimp dry – Removing excess moisture helps ensure the shrimp bake up tender and juicy, not soggy.
- Don’t overbake – Shrimp cook quickly. Bake just until they turn pink and opaque.
- Add bacon last – Sprinkle the crumbled bacon on for the last 2 minutes of baking so it stays nice and crisp.

To Store
Let the shrimp cool completely, then store them in an airtight container in the refrigerator for up to 2 day.
Reheating
For the best results, reheat the shrimp in a 350°F oven for about 5 minutes, just until warmed through. Avoid the microwave, it can make the shrimp rubbery.

Notes
Frozen shrimp can be used in this dish. I prefer fresh shrimp but on occasion I do use raw frozen shrimp. Most grocery stores carry raw, peeled, and deveined shrimp in the seafood department.
Use larger shrimp. Either Large or Jumbo. Any size smaller and the shrimp may get over cooked and become tough during the baking process.
If omitting white wine, substitute the exact amount of white wine with lemon juice or vegetable broth.
