Step By Step Pork Casserole Recipe
Prep the vegetables –
- Chop the onion and carrot.
- Mince the fresh garlic cloves.
- Heat olive oil in a skillet.
- Add the ground pork.
- Break up the meat while it’s cooking.
- Cook the pork until brown.
- Transfer the pork to the slow cooker.
- Add the rice and beef broth.
- Toss in the chopped carrot, onion and tomato paste.
- Pour the oregano, paprika, cumin, salt, pepper, and garlic.
- Throughly stir the ingredients together.
- Cover slow cooker with a lid.
- Cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the vegetables are tender.

Ingredients
- 1 Pound of ground pork
- 1 Tablespoon olive oil
- 2 1/2 Cups beef broth
- 1 Large carrot, diced (about 1 to 1 ½ cups)
- 1 Medium yellow onion (about 1 cup)
- 2 Tablespoons tomato paste
- 3 to 4 Garlic cloves, minced
- 1 Teaspoon dried oregano
- 2 Teaspoons sweet paprika
- 2 Teaspoon ground cumin
- 1 Teaspoon salt
- 1 Teaspoon ground black pepper
- 1/4 Cup cream cheese - softened
- 1/2 Cup sour cream
- 1 Cup jasmine rice - (uncooked)
- 1 Cup shredded cheddar cheese
- Green onions - optional garnish
Instructions
- Chop the onion and carrot. Mince the garlic.
- Heat a large skillet or frying pan over medium-high heat.
- Add the olive oil to heat up.
- Add the ground pork. Use a wooden spoon or ground meat chopper to break up the meat.
- Cook the pork for about 3-4 minutes or until completely brown (no pink showing).
- Transfer the pork to the slow cooker.
- To the slow cooker, add the rice and beef broth.
- Next add the chopped carrot, onion and tomato paste.
- Sprinkle the oregano, paprika, cumin, salt, pepper, and garlic over the top of the vegetables.
- Stir the ingredients together. Make sure that the rice is mixed in and completely submerged in liquid.
