Simple Ingredients For Ground Pork Casserole

Step By Step Pork Casserole Recipe

Prep the vegetables – 

  • Chop the onion and carrot.
  • Mince the fresh garlic cloves.
  • Heat olive oil in a skillet.
  • Add the ground pork.
  • Break up the meat while it’s cooking. 
  • Cook the pork until brown.
  • Transfer the pork to the slow cooker.
  • Add the rice and beef broth.
  • Toss in the chopped carrot, onion and tomato paste.
  • Pour the oregano, paprika, cumin, salt, pepper, and garlic.

  • Throughly stir the ingredients together.
  • Cover slow cooker with a lid.
  • Cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the vegetables are tender.
  • When the casserole is almost ready, stir in the sour cream and cream cheese mixture and sprinkle the shredded cheddar cheese over the entire top of the casserole. 
  • Cover with the lid to finish cooking.

Ingredients – Substitutions And Variations

  • Ground Pork – Pork makes this dish a hearty meal. If you want to lighten it up a little bit, a perfect way is to use ground chicken, ground turkey, or lean ground beef.
  • Rice – I prefer Jasmine rice but long grain white rice works just as good.
  • Beef Broth – Beef stock, chicken broth, or chicken stock can can be used. Also, water can be substituted for the broth but it doesn’t add much flavor to the casserole.
  • Vegetables This is the perfect recipe to add your favorite vegetables. Add green peppers, red peppers for a little spice. If you are a tomato lover, add a can of tinned tomatoes for some yumminess!
  • Garlic  I’m a fan of fresh garlic, and lots of it! If you’re in a pinch or you prefer it, garlic powder can be used.
  • Seasonings Cumin, paprika, and oregano are the staples of the recipe, however Worcestershire sauce and red chili powder add a delightful savor to the casserole.
  • Shredded Cheese Cheese is optional but it definitely is a delicious addition! Parmesan cheese is a great substitution.

Ingredients

  • 1 Pound of ground pork
  • 1 Tablespoon olive oil
  • 2 1/2 Cups beef broth
  • 1 Large carrot, diced (about 1 to 1 ½ cups)
  • 1 Medium yellow onion (about 1 cup)
  • 2 Tablespoons tomato paste
  • 3 to 4 Garlic cloves, minced
  • 1 Teaspoon dried oregano
  • 2 Teaspoons sweet paprika
  • 2 Teaspoon ground cumin
  • 1 Teaspoon salt
  • 1 Teaspoon ground black pepper
  • 1/4 Cup cream cheese - softened
  • 1/2 Cup sour cream
  • 1 Cup jasmine rice - (uncooked)
  • 1 Cup shredded cheddar cheese
  • Green onions - optional garnish

Instructions

  1. Chop the onion and carrot. Mince the garlic.
  2. Heat a large skillet or frying pan over medium-high heat. 
  3. Add the olive oil to heat up.
  4. Add the ground pork. Use a wooden spoon or ground meat chopper to break up the meat.
  5. Cook the pork for about 3-4 minutes or until completely brown (no pink showing). 
  6. Transfer the pork to the slow cooker.
  7. To the slow cooker, add the rice and beef broth.
  8. Next add the chopped carrot, onion and tomato paste.
  9. Sprinkle the oregano, paprika, cumin, salt, pepper, and garlic over the top of the vegetables.
  10. Stir the ingredients together. Make sure that the rice is mixed in and completely submerged in liquid. 
  11. Cover the slow cooker with the lid.
  12. Cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the vegetables are tender.
  13. In a small bowl, add the softened cream cheese and sour cream.
  14. Whip together with a whisk or a fork.
  15. During the last 15 minutes, stir in the cream cheese mixture and sprinkle the shredded cheddar cheese over the entire top of the casserole. 
  16. Cover with the lid to finish cooking.
  17. Garnish with green onions and serve.
