Ingredients And Substitutions
Butter: I always use unsalted butter in recipes. You can use salted butter if you prefer.
Shredded Chicken: This recipe calls for 4 cups of chicken. A whole rotisserie chicken saves a lot of time cooking and is about 4 cups or any leftover chicken is great to use!
Frozen Vegetables: You can use a variety of frozen vegetables for this viral chicken cobbler recipe like green beans, a bag of peas or a medley of broccoli, carrots, and cauliflower.
Seasonings: I love onion powder, garlic powder, and thyme in this dish but use your favorite seasoning!
Red Lobster Cheddar Bay Biscuit Mix: I mean, talk about delicious! You could use another type of biscuit mix but, I wouldn’t!
Whole Milk: Low fat milk can be substituted.
Chicken Broth: Chicken stock can be used.
Condensed Cream of Chicken Soup: Other varieties of condensed soup can be substituted. Cream of mushroom soup and cheddar cheese soup are very popular. I prefer the taste of the creamy chicken soup in this savory cobbler.
Shredded Cheese: Serve on the side for those who love cheesy biscuits!
How To Make Easy and Delicious Chicken Cobbler
- Preheat oven.
- Melt the butter in the baking dish while the oven is pre-heating. This will save you from using a small bowl and the microwave to melt the butter. Use oven mitts and remove the dish from the oven.
- Now that the butter is melted, add chicken in an even layer.
- Layer the frozen vegetables on top of the chicken. (see Recipe Tips)
- Sprinkle the onion powder, garlic powder, black pepper, and dried thyme evenly over the vegetables.
- Whisk the boxed Red Lobster dry biscuit mixture and the seasoning packet together.
- Mix in the cups of milk to the dry Red Lobster mix.
- Pour it over the chicken filling.
- In a separate bowl, throughly mix the chicken broth with the cream of chicken soup.
- Carefully pour the soup mixture over the biscuit topping. I know this looks and sounds odd but trust me, it’s going to turn out perfect!
- Bake until golden brown on top. (see Recipe Tips)
- Let the chicken cobbler rest for a few minutes before serving.
See recipe card below for complete details and baking time.
Recipe Tips
- The 9×13-inch baking dish will be very full of ingredients.
- If you feel like the cobbler might bubble over the top of the dish during the baking process, place a baking sheet on the bottom oven rack to catch any sauce that might drip. It hasn’t happened to me yet but every dish and oven can be different.
- This recipe is a dump dish. Kind of like a lemon dump cake.
- NO mixing of ingredients in the baking dish. It’s all about layering.
- It looks and sounds odd for a chicken pot pie casserole but trust me, you will be amazed at how delicious it tastes!
