Ingredients for Zucchini Chips. There are 2 zucchinis, a bowl of flour, a bowl of bread crumbs, a bowl with2 brown eggs, three very small bowls, one with milk, one with salt and one with pepper. Fresh Zucchini: This recipe calls for two medium zucchini. Try to find them of the same size and as round as possible. This will make the zucchini slices more consistent.


Flour: You can use all-purpose flour or any gluten-free flour.  

Eggs and Milk: Large eggs with a little milk whisked together bind the coating to the zucchini rounds.

Panko Breadcrumbs: They give the zucchini a crispy outside coating.

Parmesan Cheese: Use freshly grated for the best savory parmesan flavor.

Salt and Pepper: Used to enhance all the flavors of a dish. Sea salt or kosher salt works best. Also, use fresh ground black pepper.

Seasoning: Onion powder, garlic powder, and Italian seasoning. 

Optional: Add a few shakes of red pepper flakes for a little heat.

Instructions and Step-By-Step Photos

  • Cut zucchini into 1/4-inch slices, discarding the ends of the zucchini. Recipe Tip: Try and keep the slices on the thinner side. Thicker slices tend to be mushy in the middle.
  • Preheat your air fryer for 5 minutes. This will help the chips cook evenly through. 
  • Pour the flour into a medium, shallow bowl.
  • Whisk the eggs and the milk together in a small bowl until fully combined. 
  • Combine the panko bread crumbs, parmesan cheese, onion powder, garlic powder, salt, black pepper, and Italian seasoning in a large mixing bowl.
  • Dip the zucchini slices into the flour mixture then the egg mixture.
  • Spray the air fryer basket with cooking spray. 
  • Add the zucchini to the basket in a single layer. Recipe Tip:  Don’t overcrowd or overlap the chips when baking them. You want the hot air of the air fryer to circulate each chip to create the perfect crispy texture.
  • Cook until golden brown, flipping halfway through. Recipe Tip: If you have to cook the zucchini chips in batches, line a baking sheet with parchment paper and keep them warm in a preheated oven.
  • Serve with your favorite dipping sauce.

How To Store

Place room temperature zucchini chips in an airtight container. Store in layers between sheets of parchment paper. This will help to prevent chips from losing any of the crust.

How To Reheat

Reheat any leftover zucchini chips in the air fryer at 400 degrees F for 2 to 3 minutes before serving.

  • 2 medium zucchinis
  • 1/2 cup flour

  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt

  2. Slice zucchini into 1/4-inch thick slices, discarding the ends of the zucchini. 
  3. Preheat your air fryer for 5 minutes. 
  4. Pour the flour into a medium, shallow bowl.
  5. Whisk the eggs and the milk together in a small bowl until fully combined. 
  6. Mix the panko bread crumbs, parmesan cheese, onion powder, garlic powder, salt, black pepper, and Italian seasoning in a third bowl.
  7. Dip the zucchini slices into the flour mixture then the egg mixture. 
  8. Then gently press slices in the panko mixture, coating both sides.
  9. Spray the air fryer basket with cooking spray. 
  10. Add the zucchini to the basket in a single layer. 
  11. Cook at 400 degrees F for 8 minutes or until golden brown, flipping halfway through. All air fryers are different so the cooking time may vary by 1-2 minutes.
