- Ground Pork: Pork makes this dish a hearty meal. If you want to lighten it up a little bit, a perfect way is to use ground chicken, ground turkey, or lean ground beef.
- Rice: I prefer Jasmine rice but long grain white rice works just as good.
- Beef Broth: Beef stock, chicken broth, or chicken stock can can be used. Also, water can be substituted for the broth but it doesn’t add much flavor to the casserole.
- Vegetables: This is the perfect recipe to add your favorite vegetables. Add green peppers, red peppers for a little spice. If you are a tomato lover, add a can of tinned tomatoes for some yumminess!
- Tomato paste: If you don’t have any tomato paste on hand and your only option is tomato soup, yes it can be used. Keep in mind that tomato soup is a bit sweeter than tomato paste and contains more liquid. Add one 10.75-ounce can of tomato soup to the recipe, reducing the broth by 1/4 to 1/2 cup.
- Garlic: I’m a fan of fresh garlic, and lots of it! If you’re in a pinch or you prefer it, garlic powder can be used.
- Seasonings: Cumin, paprika, and oregano are the staples of the recipe, however Worcestershire sauce and red chili powder add a delightful savor to the casserole.

Ingredients
- 1 Pound of ground pork
- 1 Tablespoon olive oil
- 2 1/2 Cups beef broth
- 1 Large carrot, diced (about 1 to 1 ½ cups)
- 1 Medium yellow onion (about 1 cup)
- 2 Tablespoons tomato paste
- 3 to 4 Garlic cloves, minced
- 1 Teaspoon dried oregano
- 2 Teaspoons sweet paprika
- 2 Teaspoon ground cumin
- 1 Teaspoon salt
- 1 Teaspoon ground black pepper
- 1/4 Cup cream cheese – softened
- 1/2 Cup sour cream
- 1 Cup jasmine rice – (uncooked)
- 1 Cup shredded cheddar cheese
- Green onions – optional garnish
Instructions
- Chop the onion and carrot. Mince the garlic.
- Heat a large skillet or frying pan over medium-high heat.Â
- Add the olive oil to heat up.
- Add the ground pork. Use a wooden spoon or ground meat chopper to break up the meat.
- Cook the pork for about 3-4 minutes or until completely brown (no pink showing).Â
- Transfer the pork to the slow cooker.
- To the slow cooker, add the rice and beef broth.
- Next add the chopped carrot, onion and tomato paste.
- Sprinkle the oregano, paprika, cumin, salt, pepper, and garlic over the top of the vegetables.
- Stir the ingredients together. Make sure that the rice is mixed in and completely submerged in liquid.Â

- Cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the vegetables are tender.
