If you’re a chocolate chip cookie and a brownie lover, this Easy Marbled Chocolate Chip Cookie Brownie Recipe is the perfect dessert! 


This gooey, chocolatey treat will satisfy a sweet tooth any time of the year and it is so incredibly easy to make.

I mean, what’s not to love about a fudge brownie with chocolate chip cookie batter blended together? Yummy!

This decadent treat gets its name by combining “brownie” and “cookie,” resulting in “brookie”!

Domino’s Pizza offers a dessert similar to this that’s well-loved, but I have to say, the homemade version is the bomb!

Simple Ingredients 

There are seven white bowls of different sizes with ingredients in them. The largest bowl has white flour in it. There are three medium size bowls. One has chocolate chips in it, another has white sugar in it, the third one has brown sugar in it. There are three smaller bowls. One has 2 brown eggs in it, one has water in it and the third has vegetable oil in it. There are four very small clear glass ramekins. Easy Marbled Cookie Brownie Recipe

For The Chocolate Chip Cookie Dough

  • Whisk the dry ingredients together.
  • Set aside.

  • In a large mixing bowl, cream butter and both sugars.

  • Add egg and vanilla.
  • Beat until fluffy.

  • With the mixer on low speed, gradually add the flour mixture to the wet ingredients.
  • Mix until soft dough forms.

  • Do not worry about forming cookie dough balls, it spreads out during baking.

  • In a separate bowl, make the brownie mix according to the package.

  • Pour the brownie batter over the cookie dough and spread it around evenly.
  • Cover pan with aluminum foil. Bake for 15 minutes.

Variations of Brownie Cookies

Brownie – Use whatever brownie batter you like the best. I usually get the BOGO at my local grocery store. I like the convenience of boxed brownie mix when I need the perfect sweet treat ASAP.

 Semi-sweet chocolate chips – you can use dark chocolate chips, milk chocolate chips, or even white chocolate chips.

Nuts – Mix in 1/2 cup of your favorite chopped nuts into the cookie dough or brownie batter. Walnuts or pecans are the most popular.

Caramel Sauce  After the Marbled Cookie Brownie is done baking, drizzle some melted Caramel Bits  over the top before cutting and serving.

Sea Salt Flakes – This is one of my favorite toppings for the Marbled Chocolate Chip Cookie Brownie. Sea Salt compliments the sweetness of the chocolate.  Sprinkle a little over the brookies before serving. It’s insanely good!

  • To ensure the chocolate chip cookie brownies don’t crumble when cutting, make sure they are completely cool. Also, use a plastic knife for the cleanest cut lines.
  • For fudgy brownies, total bake time is around 30 minutes. For a crispy brownie, total time is 40 minutes. 

How To Store

Any leftover brownies can stay on the counter top covered with plastic wrap or in an airtight container for a couple of days or in the fridge for about a week.

Ingredients

  • 1/2 cup butter (1 stick) - softened
  • 1/2 cup sugar - white granulated
  • 1/2 cup light brown sugar - packed
  • 1 1/2 teaspoon vanilla extract
  • 1 large egg - room temperature
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Non-stick cooking spray
  • For Brownie Batter (follow ingredients according to the brownie mix)
  • 1/4 cup water
  • 1/3 cup vegetable oil
  • 1 large egg - room temperature
  • 1 box brownie mix - Supreme Triple Chunk (or mix of choice)

Instructions

  1. Preheat oven to 350 degrees.
  2. Lightly spray baking dish.
  3. In a medium bowl, whisk the flour, baking powder, baking soda, and salt. Set aside.
  4. In a large mixing bowl, cream butter and both sugars.
  5. Add egg and vanilla. Beat on medium speed for 2 to 3 minutes or until fluffy.
  6. With the mixer on low speed, gradually add the flour mixture to the wet ingredients. Use a rubble spatula and scrape the sides of the bowl to incorporate all the ingredients. 
  7. Mix until throughly combined and soft dough forms.
  8. Use a rubber spatula or wooden spoon and gentle fold in the chocolate chips into the dough.
  9. Using a large spoon, place large scoopfuls of cookie dough in the prepared baking dish. Use all of the cookie dough. Do not worry about forming perfect cookie dough balls, it spreads out during baking.  
  10. Brownie Batter - In a separate bowl, combine the brownie mix, water, oil, and egg with a whisk until well combined.
  11. Pour the brownie batter over the cookie dough and spread it around evenly.
  12. Cover pan with aluminum foil. Bake for 15 minutes. Use oven mitts and remove foil and bake for an additional 15 to 20 minutes. (see Top Tips)
  13. Place the pan on a wire rack. For best results, let the brownies completely cool before cutting. (see Top Tips)

My wife and I made these and these are much better than any of the "brookies" we have had before, would recommend!!
