Ingredients
- 2 sticks salted butter (1 cup)
- 1/2 cup light brown sugar – packed
- 1 teaspoon vanilla extract
- 1/2 teaspoon fine sea salt
- 20 ounces of mini marshmallows (2 10-ounce bags)
- 9 to 10 cups of crispie rice cereal
- Flaky sea salt
- Optional toppings: Melted chocolate chips and/or caramel sauce
Instructions
- Spray a baking pan with nonstick cooking spray and set aside.
- Melt butter in a large pot over medium-low heat until it begins to turn light brown and smells toasty, stirring frequently.
- Remove from the heat and let it cool for about 5 to 6 minutes.
- Stir in the brown sugar, vanilla, salt, and cream. Return to medium heat and cook, stirring constantly, until the sugar melts and the mixture is dark and bubbly, about 3 to 4 minutes.
- Add in the marshmallows. Use a rubber spatula and stir rapidly until melted and smooth, about 5 minutes.
