Ingredient Notes

- Rotisserie chicken: A total time-saver! Shredded or cubed works. It’s also a great way to use leftover turkey or baked chicken breasts.
- Stove Top Stuffing mix: The shortcut that brings all the savory flavor to the dish. Any variety works: chicken, turkey, or even savory herbs. I like to use the lower-sodium variety to control the sodium level.
- Chicken broth: Helps moisten the stuffing and adds chicken flavor to the casserole. Hot water or vegetable broth can be substituted.
- Condensed soup: This creates the creamy base for the casserole. You will need two cans of soup. I like to use a combination of cream of chicken and cream of celery soup. You can use cream of mushroom soup if you prefer.
- Sour cream: Adds a nice tanginess to the casserole. You can swap it out with Greek yogurt.
- Seasoning: Poultry seasoning, black pepper, and garlic powder enhance the traditional stuffing flavor.
- Minced onion: Adds a mild sweetness and depth. Fresh or dried, both work.
- Unsalted butter: I use unsalted butter to control the salt level in the casserole, as the broth and soup can be fairly salty on their own.
- Optional add-ins: A bag of your favorite frozen mixed vegetables and/or shredded cheese.

Step-by-Step Instructions

- In a medium bowl, combine the stuffing mix with the chicken broth. Stir well and set aside for 5 minutes. DO NOT prepare the stuffing according to the package directions.

- Place the shredded chicken into a large bowl.
- Next, add the soup, sour cream, minced onions, and the dry seasonings. Stir until the ingredients are fully incorporated.

- Spread the chicken mixture evenly with a spatula or large spoon into a prepared baking pan.
- Fluff the stuffing mix with a fork and then spoon it over the top of the chicken mixture.

- Drizzle the melted butter over the top of the casserole.
- Bake uncovered in a preheated oven until hot and bubbly, and is light golden brown.
- Serve warm with your favorite sides for the ultimate comfort meal.

Laura Belle’s Tips
- Don’t skip the sour cream – It helps with the overall creaminess of the casserole and adds just the right amount of tangy flavor.
- Mix gently – Stir everything together until just combined. Over-mixing can make it too dense.
- Add more broth if needed – If the chicken mixture looks a little dry, add an extra splash of broth before spooning it into the baking dish.
- Turkey and dressing – A great recipe to use leftover Thanksgiving turkey and dressing to create a delicious version of this hearty meal.
Storing
Let any leftovers cool to room temperature, then cover tightly with aluminum foil or transfer to an airtight container. Keep refrigerated for up to 3-4 days.
Reheating
Microwave – Warm individual portions until heated through. This is a quick way to reheat; just keep in mind that the stuffing topping won’t be crisp.
Oven – This is the best option for larger portions or the whole casserole. Bake for about 20 minutes in a 350°F preheated oven. Cover with foil if needed to keep from drying out.

Serve It Up with These Easy Favorites
This creamy casserole is hearty enough to stand on its own, but it pairs perfectly with these sides to complete the meal.
- Side salads – A crisp chopped salad or Caesar salad adds a nice light contrast to the creamy casserole.
- Cranberry sauce – The sweet-tart flavor pairs deliciously with the savory chicken and stuffing.
- Mashed potatoes – If you’re feeding a hungry crowd, go all in with creamy buttery mashed potatoes; it’s pure comfort!
- Biscuits – Easy 3-ingredient sour cream biscuits from Back To My Southern Roots.
